This is a quick and easy recipe that kids seem to really like.
For fruit salsa:
1 fuji apple, diced
1 cup sliced fresh strawberries
2 kiwis, peeled and diced
2 bananas, peeled and diced
juice of one lime
2 tablespoons sugar (optional)
In a medium bowl, mix together all the fruit, lime juice, and sugar. Cover and chill.
For the tortilla chips:
6 whole wheat tortillas
cooking spray
3 tablespoons sugar
1 tablespoon ground cinnamon
Slice tortillas into triangles. On a cookie sheet sprayed with cooking spray, place the tortilla triangles in a single layer, spray them lightly with cooking spray and bake for 5-10 minutes. Serve the chips warm with cold salsa.
