Start of a 3-day week

Good morning! Hope you’ve had a good and restful weekend and are ready to get back to the regular routine.

I’m off to work…lots to do there and then I teach Sculpt and Rock Bottom later this afternoon. And, I’m only working 3 days this week…I’m taking Friday off for a fun adventure with my mom, my sister, Owen, and Emma Kate- so I have to focus to get everything done in 3 days!

Favorite Breakfast Sandwich

Good morning! I started my day by fueling up with my new favorite breakfast sandwich. I saw my friend Tammye yesterday and she told me she had made it, which reminded me that I needed to have it again!

  • double fiber bread, toasted
  • creamy almond butter (with sea salt – my new favorite kind)
  • Nutella (I’m almost out, so just a tiny bit)
  • sliced banana
  • sliced strawberry

Sandwich perfection.

Now, I’m off to talk about Bariatric Surgery Nutrition to the new year of dietetic interns…I’m looking forward to it!

Beautiful morning

Good morning! It almost feels like fall here today…there’s a bit of a chill in the air. I love it!

Breakfast was banana oats topped with dark chocolate, strawberries, and almond butter…perfect.

Today should be a relatively calm and fun day- I have a few nutrition consults and boot camp this afternoon! I have to enjoy these next two Monday nights because in two weeks our Monday night weight loss class starts back for the fall.

Snooze-aholic

Good morning!!

Quick and simple breakfast today: whole grain English muffin with almond butter and blackberry preserves + berries.

Does anyone else totally abuse the snooze button on your alarm clock? I have to find a way to start jumping out of bed on the first alarm. This morning, my alarm was set for 6:00 and I didn’t crawl out of bed until 6:48! I have to add- this is a lifelong pattern, so change may not even be possible at this point :)

Energy Bowl

Good morning! After getting home late last night and getting about 5 hours of sleep…a good high-energy breakfast was definitely on the agenda. In the ” bowl”:

  • banana oats
  • dark chocolate chips
  • blueberries
  • crunchy almond butter

Perfect start to my day…which, luckily, shouldn’t be terribly mentally demanding. I have a couple of meetings and plan to spend the rest of the day in “catch-up”, planning, and continuing education mode. My CDE (Certified Diabetes Educator) credential is set to be renewed next month…and I still have quite a few hours of continuing education to catch up on.

I had a couple of questions yesterday about my Rock Bottom class, which unfortunately, I didn’t end up getting to teach (but I’m so thankful I found someone to sub for me so I could be with Anthony and his family).  Rock Bottom is basically a 30-minute strength training class that focuses on legs, abs, and core. I like to do a variety of squats, Bosu squats, lunges, walking lunges, dead lifts, “fire-walkers”, and lots of different abs/corework. Great class- and I love that it is only a quick 30 minutes!

Decadent Breakfast Sandwich

Good Monday Morning!! Ihave a busy day ahead….nutrition consults, teach gastric banding nutrition class, customer service training videos, and then boot camp!

Breakfast was a yummy sandwich made of:

  • toasted whole wheat bread
  • creamy almond butter
  • Nutella
  • sliced banana
  • sliced strawberries

Chocolate Strawberry Oats

Good morning! What a beautiful morning it is here – 63 degrees outside, just a bit of a chill in the air…Anthony and I got up and started the morning with a nice walk…with my hazelnut coffee.

Then, we came home and had a delicious bowl of banana oats topped with dark chocolate, strawberries, and almond butter – a perfect combination.

Our agenda for the rest of the day:

  • church – volunteer in toddlers’ classroom
  • lunch
  • grocery shopping
  • relax

Up Before the Sun + Q & A

Good morning! I’m up early (for me) with an attempt to get out the door by 6:15! Today is our 2nd smoothie sale at work, we held one a few weeks ago and it was very successful, so we’re trying it again. It is a fundraiser for the walk that our Weight Management Center is sponsoring in September. Proceeds go to our hospital foundation to be used for the benefit of our patients. So, breakfast was relatively light as I needed something quick and I know that I’ll probably have a smoothie in a couple of hours. I had 1 1/2 Trader Joe’s 5 seed almond bars + almond butter + blackberries – I love these bars!

A couple of people have asked what flat-out wraps are…I love these wraps – they’re a great source of fiber and protein. I find them in my grocery store’s bakery/bread section.

I’ve also had some questions about my pesto that I use often….I would love to tell you it’s homemade, but it isn’t…it is Buitoni’s brand and it is so delicious and easy that it is one of the go-to products that we almost always have in our fridge.
