Banana Bread Banana Oats

Last night, Anthony’s parents gave us a few slices of homemade banana bread…one of my favorite. things. ever. As we were driving home, I was already imagining creating a yummy breakfast this morning.

Another one of my favorite things is being inspired by food bloggers with new meal ideas….yesterday morning, Kath had a delicious-looking breakfast of oats topped with a Massive Monster Muffin, so when Anthony’s parents gave us this banana bread, I started imagining a warm and creamy bowl of banana oats topped with crumbled banana bread….yum.

Homemade banana bread…it was full of walnuts and even had a few raisins…

This was a very good combo- it needed maybe a little more crunch, so next time, I might add some walnuts on top and extra raisins…but, overall a delicious and filling warm breakfast on a gray and cloudy day.

We’re off to church- I have the pleasure of working in the Toddlers class again. ;) Should be a fun morning.

Favorite Breakfast Sandwich

Good morning! I started my day by fueling up with my new favorite breakfast sandwich. I saw my friend Tammye yesterday and she told me she had made it, which reminded me that I needed to have it again!

  • double fiber bread, toasted
  • creamy almond butter (with sea salt – my new favorite kind)
  • Nutella (I’m almost out, so just a tiny bit)
  • sliced banana
  • sliced strawberry

Sandwich perfection.

Now, I’m off to talk about Bariatric Surgery Nutrition to the new year of dietetic interns…I’m looking forward to it!

Decadent Breakfast Sandwich

Breakfast was a yummy sandwich made of:

  • toasted whole wheat bread
  • creamy almond butter
  • Nutella
  • sliced banana
  • sliced strawberries

Banana oats with dark chocolate, strawberries, and almond butter…delicious!

I hope you have a good day ahead. I have another day of Customer Service Excellence training, along with some patient nutrition consults, plus prepping for a TV segment that I’m doing tomorrow. I used to do a weekly segment on a local TV station about healthy eating/nutrition, but since that show ended about a year ago, I’m out of practice. I’m really looking forward to the segment though – talking about healthy breakfast – a topic that I LOVE!

Half Blood Prince

After church, we went to Taj, one of our favorite Indian places for lunch. Their buffet is fabulous, and I love trying little tastes of everything. At a buffet though, I always try to be conscious to only eat the amount I normally would…there’s no need to go overboard and feel miserable just because it’s “all you can eat”! My plate contained house salad, yummy naan, veggie pakora, matar paneer, and chicken curry. Everything was so good.

And, a bit of rice pudding, watermelon, and Gulab Jamun (a yummy, gooey dessert soaked in syrup)…

After lunch, we decided to postpone the movie and come home to relax for a bit. Our relaxing turned into a nap which was fabulous. When I woke up, I wasn’t really ready for dinner, but I wanted a snack before our movie. I had a little more of my glowing bowl grawnola with blackberries + blueberries.

And, since I wasn’t really hungry, but we had plans for a 7:30 movie, I packed a movie dinner – almond butter and banana sandwich + barbeque pop-chips.

We’re a little behind on our movies…and Anthony had Harry Potter on the list for awhile, so that’s what we went to see tonight. I’m dying to see Julie and Julia, but that can wait (hopefully sometime this week). This is Anthony’s “birthday week”, so he got to choose. Harry Potter was really good, though. I thoroughly enjoyed it.

I can’t believe the weekend is quickly coming to an end. Time to get ready for a busy week.

Decadent Breakfast Sandwich

Good Morning!

Ever since I tried the Deluxe Almond Butter Sandwich recipe last week, I’ve been dying to try one with Nutella! Well, I’m out of strawberries, so what I threw together:

  • Arnold multi-grain sandwich thins
  • creamy almond butter (with sea salt – just tried this version and it is so good!)
  • nutella
  • sliced banana

+ Hazelnut coffee and blackberries….Deliciously decadent combo. Something about having a little chocolate with my breakfast makes me feel much less likely to overindulge throughout the day…I think it’s just the flexibility of knowing that a little chocolate is not a bad thing!

I’m off to get started on a busy day…Some work at the office this morning, an afternoon break for a haircut (yay!), and I’m working late tonight- we have a chef coming to our gastric band support group to do a mini-cooking class and tasting demo….should be fun!

Also, it’s a big day for two of my favorite little people…Owen’s first day of school (pre-school) is today – Love you Owen! Can’t wait to hear how it goes!

And, today is McKenna’s 5th birthday…I can’t believe it. Happy Birthday McKenna- Love you!

Superfoods Oatmeal

Good morning! I was up bright and early at 5:15 for my 6 am Sculpt class – I got to the gym and waited….and waited….and no one came! Very unusual, but I got a good elliptical workout in anyway since I was there.

Breakfast was one of my favorite oats combos yet…

  • 1/2 cup oats
  • 1/2 cup milk
  • 1/2 cup water
  • 1/2 cup canned pumpkin
  • 1/2 banana

(Which made 2 servings). Topped with dark chocolate, blackberries, blueberries, and raspberries + a spoonful of crunchy almond butter – what a great combination!

I’m not really a huge fan of calling foods “superfoods”….there are so many foods that could fit into that category – and so many different lists that I have seen. But, if I were going to make my superfoods list – everything in this oatmeal would definitely be on it! What’s on your superfoods list?

Breakfast Inspiration

Good morning!

I came across this recipe yesterday on Allrecipes.com for Deluxe Almond Butter Sandwiches and I decided I had to try it for today’s breakfast. I love the idea of sandwiches for breakfast because, if I’m really in a hurry, I can just run out the door with my breakfast. And, I love Allrecipes.com…I use it a lot for work projects.

I spread crunchy almond butter on one piece of toasted high fiber bread, topped with sliced bananas and strawberries, and I used raspberry preserves on the other slice of bread…simple and easy. Also, very good. Next time, I think I might add a bit of nutella since I always seem to have chocolate involved in my breakfasts one way or the other.

Chocolate Berry Banana Oats

Good morning!

Today’s breakfast was banana oats with dark chocolate, blueberries, raspberries, and crunchy almond butter + coffee =delicious start to the day!

My Tuesday is pretty busy at work and then this afternoon, I teach a 45-minute Sculpt class and a 30-minute Rock Bottom class…woo hoo! I’ve got to keep my energy going today!
