I LOVE 3-day weekends!!
Anthony and I have spent the whole day relaxing and hanging out together- 2 things we don’t get to do often enough…
Tonight- we had our own Labor Day cookout for just the 2 of us…lean grilled burgers + sweet potato fries…
And, movie night at home…
We already watched New in Town…and since we’re off tomorrow, we’re staying up for a late showing of The Last House on the Left- it’s supposed to be scary!

It is so good to be home tonight! Anthony and I are both wiped out from our late night last night, so hopefully we’ll be in bed early tonight. Anthony’s dad is recovering well and will hopefully get to come home from the hospital tomorrow. Thank you for your thoughts and well-wishes!
My day started out “not so busy”, but ended up being pretty busy after all. This morning we had our monthly “department head” meeting, where the main issues of the hospital are discussed. Our administrator goes over the finances, committee meetings, upcoming business, generally anything that needs to be shared throughout the hospital.
Lunch was take-out from the Ruby Tuesday’s salad bar…one of my favorite takeouts…I had a HUGE salad.
This salad was huge and I ate the whole thing!
We also had our weekly wellness center staff meeting, and then I spent the rest of my afternoon finishing up a presentation that I’m doing tomorrow evening for the local American Kidney Association on Eating Well for Optimum Health.
Anthony and I threw together a quick dinner tonight: lean grilled burgers on some yummy double fiber buns + baked sweet potato fries…perfect.
After spending a few minutes watching America’s Got Talent, I think we’re heading to bed early. Goodnight!
So, Anthony has truly had a birthday week! Even though his birthday was really Thursday, I’ve tried to celebrate for him a little every day this past week! My sister Amy’s birthday was yesterday, so after we left our Amazing Hot Springs Getaway this morning, we drove to my sister’s house for a joint family birthday party.
We were greeted by the newly walking Emma Kate (my niece)….
And, Owen is a great big brother and loves to help her with her new walking skills….
Dinner was grilled burgers, veggies, potato salad, and baked beans…
After dinner, it was gift time!! Emma Kate helped Anthony open his gifts….he got gift cards to one of his favorite places, Lowe’s…and a new wallet + some cash. Thank you, Mom, for planning such a nice party for us!
And, Amy got gift certificates to her favorite spa!

How did the weekend go by so fast?? Before we realized it, it was time to head home…before we left, I helped pack Owen’s lunch for pre-school- He just started a couple of weeks ago. I can’t believe he’s just 3 and already going to school! Anyway, we packed him a delicious lunch…peanut butter sandwich, sunchips, yogurt, blueberries, and juice- sounds good to me- in the coolest Cars lunchbox!
I hope you’ve had a great weekend. I’m feeling rested and refreshed, but not quite ready for the weekend to be over. Oh well, gotta get ready for Monday anyway.

Today has been a busy, but good day so far! I went into work this morning and got quite a bit accomplished…then I left around 12:30 to go to my haircut appointment. Since I knew I wouldn’t have time for lunch until later, I picked up a chocolate shredder smoothie on my way…
It was so nice to sit and relax while I got my hair highlighted and shampooed and cut…those quiet moments were the best part of my day so far. I had some long bangs cut today…I don’t usually wear bangs, so it may take a little getting used to, but I really like it so far!
After my haircut, I had just enough time to run home and let the dog out for awhile and grab a quick, late lunch. I had a Boca burger on a sandwich thin with provolone, cheddar pop-chips, and the last of my juicy cherries.
Now I’m heading back to work for our gastric band support group led by Chef Amelia tonight…should be fun, but a long night…I’ll probably be at work till 8:30 or 9:00. See you later!

After all our shopping this afternoon, and Anthony’s long work day..we were all in the mood for a night at home (Michael’s home) tonight.
Michael wanted to treat us to our favorite vacation drinks…so we blended up some delicious pina coladas….
And, Michael started working on his famous macaroni salad….
Dinner was grilled burgers in pitas, Michael’s macaroni salad, and fresh grilled corn…simple and delicious.
We sat outside on the patio and enjoyed dinner….then, we spent a couple of hours playing “Sequence” – I love this game! Anthony dominated though, winning 3 out of 6 games!
Michael has, as always, been so hospitable….it has been such a lovely day…no real agenda…I need days like this more often!
I hope you’ve had a good Saturday. We are getting close to heading to bed…Anthony and I are both looking forward to sleeping in a bit tomorrow morning for the first time in weeks!
