Cookie Monster

Well, our 3-day weekend is quickly coming to an end. It’s been fun, but now it’s time to get ready to get the work-week started.

We had a great day, though. After our yummy breakfast, Anthony and I went for a nice 40-minute or so walk on this great greenway by the lake…

And, then I did a bit of shopping – I found a great deal on a swimsuit for our upcoming anniversary vacation…

Lunch was not that photogenic, but it was definitely delicious! Leftover tofu and veggie pad thai + some barbeque pop-chips.

We spent our afternoon just doing some things around the house….laundry, cleaning, and I got the urge to make another batch of dark chocolate chip cookies- so good…we each had 2 as an “appetizer”. 🙂

For dinner, Anthony grilled this great mahi-mahi and we added a baked sweet potato and a Greek salad…simple and delicious. The fish was so good and such a huge piece- I ate about half and I’ll probably take the other half for lunch tomorrow.

Bacon x 3

Wow- what a full day! I’ve had so much fun, but I’m ready to curl up with Anthony for awhile, and then crawl into bed.

This afternoon, after a busy day of mowing the lawn, doing laundry, cleaning, etc…Anthony and I decided to have a treat – we always feel like we’re on vacation when we have a pina colada….

My friend Tammye’s little girl McKenna, who I’ve mentioned many times before…is turning 5 next week…She and I have always had a special relationship, we’ve been close since she was a baby and I spent time rocking and bouncing her to sleep many, many times.  We have also had many ice cream dates together over the years. Last year she was flower girl in our wedding. Tonight was a family birthday party for McKenna at a park by the lake.  Anthony and I had dinner reservations at this great place tonight, but we had to stop by and spend a bit of time at the party. Here’s sweet McKenna with her loot….

We declined the delicious snacks and cake at the party, because we had dinner reservations at a fabulous place, Foothills Milling Company. We had a gift certificate that had been a wedding gift from Chad and Morgan that we hadn’t had the chance to use until tonight. This was one of the best meals I’ve had in a long time…and every course that I ordered included bacon! Seriously, it was a small amount in each dish, but it had such an amazing flavor. Forgive the quality of the pics, I haven’t mastered the art of photography in dark restaurants, but the food was so good – I had to show you anyway!

First we shared an appetizer – Vidalia Onion Goat Cheese Tart….(with bacon) – AMAZING!

We shared a Baby Spinach Salad with Warm Bacon Dijon Dressing….amazing….and I had a glass of Old Vine Zinfandel.

And, for my entree, seared Sea Bass topped with crab salad, served over sweet corn saute (with what else, bacon?)…

Amazingly delicious meal  – if you’re ever in the Knoxville area, definitely check out Foothills Milling Company. And, Thank You again to Chad and Morgan for a delicious meal!
