Cookie Monster

Well, our 3-day weekend is quickly coming to an end. It’s been fun, but now it’s time to get ready to get the work-week started.

We had a great day, though. After our yummy breakfast, Anthony and I went for a nice 40-minute or so walk on this great greenway by the lake…

And, then I did a bit of shopping – I found a great deal on a swimsuit for our upcoming anniversary vacation…

Lunch was not that photogenic, but it was definitely delicious! Leftover tofu and veggie pad thai + some barbeque pop-chips.

We spent our afternoon just doing some things around the house….laundry, cleaning, and I got the urge to make another batch of dark chocolate chip cookies- so good…we each had 2 as an “appetizer”. :)

For dinner, Anthony grilled this great mahi-mahi and we added a baked sweet potato and a Greek salad…simple and delicious. The fish was so good and such a huge piece- I ate about half and I’ll probably take the other half for lunch tomorrow.

Burger and Fries

It is so good to be home tonight! Anthony and I are both wiped out from our late night last night, so hopefully we’ll be in bed early tonight. Anthony’s dad is recovering well and will hopefully get to come home from the hospital tomorrow. Thank you for your thoughts and well-wishes!

My day started out “not so busy”, but ended up being pretty busy after all. This morning we had our monthly “department head” meeting, where the main issues of the hospital are discussed. Our administrator goes over the finances, committee meetings, upcoming business, generally anything that needs to be shared throughout the hospital.

Lunch was take-out from the Ruby Tuesday’s salad bar…one of my favorite takeouts…I had a HUGE salad.

This salad was huge and I ate the whole thing!

We also had our weekly wellness center staff meeting, and then I spent the rest of my afternoon finishing up a presentation that I’m doing tomorrow evening for the local American Kidney Association on Eating Well for Optimum Health.

Anthony and I threw together a quick dinner tonight: lean grilled burgers on some yummy double fiber buns + baked sweet potato fries…perfect.

After spending a few minutes watching America’s Got Talent, I think we’re heading to bed early. Goodnight!

Speedy Hours

Does anyone else feel like time is flying by too fast? Sometimes it seems that the days are a blur and the hours are passing too quickly!

Today was a busy, but good day at work. I started with a diabetes nutrition consult, taught a gastric banding nutrition class, and participated in Customer Service Excellence training videos with my staff…I finally got to grab a quick late lunch from the hospital cafe…grilled chicken on whole wheat wrap + apple…

My afternoon was spent catching up on paperwork, emails, and returning phone calls – I also had a little treat on my way to boot camp – tall cinnamon dolce iced latte – yum!

Chad taught an excellent boot camp tonight- just the right amount of sweat and pain- this class is one of the highlights of my week, physically and mentally – such a great stress reliever!

I was so excited to get home at a decent hour tonight to spend time with Anthony. We didn’t really have anything planned for dinner, so here’s what we came up with…Buffalo Chicken Salad with a side of sweet potato fries…and, it was SO GOOD! We roasted some skinless, boneless chicken tenders in buffalo sauce, added them to a salad (+ extra buffalo sauce for me) + sweet potato fries on the side…add a little blue cheese dressing and this was the perfect quick dinner.

Bath Time

Happy Sunday night! I can’t believe the weekend is almost over so soon!

After church, and volunteering in my Toddlers room full of 18 kids today (yes – 18 children between the age of 1-2)…I was ready for some rest and relaxation. First, though, we had lunch at one of our favorite Mexican places. Of course, we started with our traditional chips, salsa, and guacamole.

It is so easy to eat unhealthfully at Mexican places, but you can also eat relatively well, by making smarter choices, watching portion sizes, and observing your fullness cues. To me, little splurges are definitely worth it. For my entree, I chose a simple cheese enchilada, which I covered in salsa, + beans and rice.

Lunch was amazing. After lunch, we did our quick weekly grocery shopping trip and came home to relax and rest…one of the best parts of the weekend.

Dinner was delicious too – grilled wild tuna steaks with a ginger-orange sauce, baked sweet potato, and sauteed spinach….

Now, it is bath time for 3 dogs! Yes- we have a fun hour ahead. Then it’s time to prepare for a busy week. I hope you’ve had a great weekend. Thanks, as always, for reading.

Word of the day: Simplicity

One of my goals for a long time now has been simplifying my life. Sometimes I’m pretty good at it, sometimes not so good. But, my goal is to focus less on stuff, less on busyness, less on always doing and having more, more, more. I also love simplicity in food.

Today’s lunch was simple, but delicious – grilled chicken, lettuce, tomato, and provolone on a whole-wheat wrap from our hospital cafe. I got to have lunch with Anthony which was a bright spot in my day (+ a few of his fries!)…

After work and boot camp, I headed home. Since we were out of town this weekend, we haven’t gone grocery shopping, and we didn’t have a plan…which meant an afternoon grocery store run…still, dinner was simple, but very good…grilled balsamic chicken, baked sweet potato, and roasted broccoli.

What are some things that you do to simplify your life?

My goal tonight is early to bed…there was a mistake with my aerobics class schedule, and somehow, I ended up scheduled to teach a 6 am Sculpt class tomorrow morning + a one-hour Sculpt class + 30 minute Rock Bottom class tomorrow afternoon!! I’m going to make it work, but I know in advance that I will be exhausted, so my goal is to get a good night’s sleep tonight and start the day well tomorrow….definitely not a good “simple” day….

Fabulous Hot Springs Getaway

Yesterday we arrived at Hot Springs at 10:30 in the morning in time for our 11 am whitewater rafting trip at Huck Finn Rafting…such a cute place in a great little small town.

The rafting trip was great. It was a little calmer than we expected- I think due to the lack of rain in the Hot Springs area over the last few weeks. The trip had class 1-3 rapids. It also included a great lunch by the riverbank halfway through the rafting trip…it was a great sandwich lunch laid out on the makeshift table on the upside-down raft. I was dying that I didn’t have a camera because the lunch was so great! We had sandwiches on yummy homemade wheat bread, potato salad, beans, fresh watermelon, and a couple of oreos. The rafting trip lasted about 3 1/2 hours and even though it was calm, we loved it!

After the rafting trip, we stopped next door at a great little cafe for smoothies…I had a pina colada flavor and Anthony had strawberry.

Smoothies in hand, we walked down the street to the Hot Springs Resort and Spa…such a great place with a neat history. It is a spa that is designed around a natural hot springs…they offer spa services plus soaks in a natural, hot mineral springs, which have been considered healing and therapeutic for hundreds of years. We made reservations for a one-hour soak later in the day.

Then, we excitedly headed to the Bed and Breakfast, the Duckett House Inn and Farm. We were so excited to visit – this was our first stay at a Bed and Breakfast. We arrived to see this beautiful turn-of-the-century house situated on a lovely farm.

With a great wrap-around porch with a huge variety of chairs and swings for relaxing – the cat was very comfortable.

I absolutely loved it!

After we got settled in, and relaxed for a bit, we went back to the Hot Springs Spa for our soak in the mineral baths. It was so neat- they have individual, private, hot tubs- they’re real hot tubs, but between each guest, they are drained and refilled with the natural hot mineral springs – the water comes out of the springs at about 102 degrees – really hot and full of minerals that are known to be therapeutic in a variety of ways. Here’s our tub…

We soaked and relaxed for an hour…very nice! And, my skin felt so great afterwards, I didn’t even need moisturizer.

Dinner was at a great, little local place, the Iron Horse Station. I had a delicious grilled chicken sandwich with avocado, mozzarella, steamed spinach and garlic + sweet potato fries – and a glass of Shiraz….

After dinner, our plan was relaxation at the B and B…we were in bed by 10:30 and I slept like a baby.

When we woke up this morning, Brian, one of the innkeepers, had a pot of amazing coffee waiting…I started with a cup and went for a nice walk outside while Anthony stayed in bed. When I got back from my walk, Brian had an amazing breakfast prepared for us…homemade pancakes, fresh eggs, strawberries, some homefries, and more amazing coffee.

Brian shared the history of the house with us, some stories about hikers (the Appalahian Trail is nearby), and generally kept us entertained. I loved every minute. Breakfast was amazingly delicious.

After breakfast, we relaxed a little more on the front porch, walked around the grounds, visited the chickens…

Then, it was time for a quick shower and we headed home. Thanks again, Brian, for a lovely stay at the Duckett House. We will surely be back.

And, headed out to my sister’s house….Tonight is a joint family birthday party for Anthony and my sister Amy…should be lots of family fun.

Julia and Julia

Dinner was simple but perfect.

Anthony grilled a steak, we baked sweet potatoes, and had a simple garden tomato and basil salad.

Just before we left home to go to the movie, it started thundering and pouring….as we were driving, we saw a rainbow.

The movie was fabulous! I’ve always been a fan of cooking shows. I remember watching Julia Child when I was a child. And, when the Food Network premiered in the 90s, I was in love! I think I love watching others cook even more than cooking myself.

Meryl Streep was amazing, as was Amy Adams. I was smiling and laughing out loud through the whole movie. It was a good reminder that we have the power to create the lives we want…but that it isn’t easy and that failure and rejection are part of life. I loved one quote from Julia Child in the movie, something like, “Don’t be afraid…never apologize, no explanations.”

Another quote, “You are the butter to my bread, the breath to my life”….you have to see the movie.

If you love food, you must see this movie. I don’t think you’ll be disappointed.

Have a great night…I need to get myself into bed…early morning again tomorrow. Plus, the love-of-my-life’s birthday is tomorrow…I need to get up even earlier to make him a b-day breakfast!

Stay-at-home Friday night

Our smoothie sale went great today! We made over $800 that will go to our hospital’s foundation to be used for the benefit of our weight management patients- what a success! (And at $3 each, that means we sold nearly 300 smoothies!). And- they were yummy – I had a blueberry banana smoothie first thing this morning…

We used frozen berries, bananas, a splash of OJ, ice, and vanilla protein powder…We also registered people for our walk – Moving Together- One Step Closer, coming up in September.

I took a quick break today to have a chicken caesar salad from the hospital cafe…simple, quick, and good.

I was so happy to get home from work this afternoon…it’s been a long week, I don’t think I’ve hardly been at home this week, so I was so excited to come home and stay home. We decided to have breakfast for dinner. But, I was also craving something salty…so, while I chopped veggies, I ate several of these yummy homemade spicy dill pickles that my brother-in-law Dave made…they were great!

And, dinner was a veggie-egg scramble, sweet potato home fries, and whole wheat toast with peach butter….such a simple meal, but perfectly delicious!

Tomorrow is the first Saturday in months that we have nothing on our agenda and I am thrilled- I need a day of down time…maybe some at-home beauty treatments, catching up on sleep, and reading…and a good workout. Hope your weekend is fabulous.

Dinner tonight was simple…pesto grilled chicken, baked sweet potato, roasted broccoli, and grilled corn (corn courtesy my friend Heather)…simple but delicious.

Vacation Daydreaming

I tried a new salad from Panera Bread for lunch – the Strawberry Poppyseed Salad…thanks to a nutrition client who was asking me about it this morning, so we looked it up on the Panera Bread website, and found that with chicken, this salad only has around 300 calories!! I don’t count calories, but for a restaurant salad, that is great! That is even with the dressing! It was so good – strawberries, blueberries, pineapple, mandarin oranges, pecans, and chicken with mixed greens – delicious with a whole grain baguette – I love how chewy their bread is. It was a great meal – and it’s a great idea to check out the nutrition info. on restaurant websites- looking through the nutrition info. at Panera Bread, I found many great options, but many sandwiches and even salads with 700-1000 calories, so it is easy to be fooled into thinking you’re eating a healthy meal if you’re not careful!

After work, I met Anthony at the wellness center for a quick workout and then we headed home. I had no real plans for dinner – so we just put to use some items we had on hand. We marinated some chicken breasts in Trader Joe’s Island Soyaki marinade (love it), baked sweet potatoes, steamed some frozen veggies in the microwave, and Anthony threw together a salad with our veggies from the garden…a perfect, simple dinner.

We also spent some time tonight daydreaming and planning a vacation- we’re hoping to go somewhere tropical and relaxing for our one-year anniversary in October – right now, we’re looking at Punta Cana, Dominican Republic….I’m dreaming of being here soon….

I hope you’ve had a good Thursday! I keep saying I’m trying to get to bed early, but it never quite happens…I can be tired and dragging by 8:00, but at 10 pm, I get this new burst of energy and want to stay up late! Tonight, I’m planning to try to head to bed soon…I’ll let you know how I do tomorrow!
